Two employees were setting up a fryer by purging the pipe that supplies lard to the fryer to clean it from the lard buildup that solidifies after daily operation. As the line was purged, excess air pressure in the line caused the holding tank to overfill and spill hot lard onto the injured employee, causing severe burns to their head and neck area.
